Paleo Pumpkin Peanut Butter Zoatmeal

It’s that time of year again, people. Fall. Fall in Chicago has got to be the greatest feeling of all! I’m SO into my morning walks in the 50 degree weather, wearing a light jacket, sipping coffee, listening to my true crime podcasts, thinking about… Halloween. Too soon? Oh well. I just freaking adore Fall. With the glorious-ness that is Fall, comes Fall food. Which means cozy, comfort food. I used to be OBSESSED with a big, warm bowl of oatmeal, topped with cinnamon and apples. MMM! And then I always wondered, “why does my tum tum feel like complete poop after I devour oatmeal?!” I just do not tolerate oats in large doses like that, even gluten free oats. This saddened me to my core. Then entered this culinary masterpiece: Pumpkin Peanut Butter Zoatmeal. This meal combines ALL of my favorite things: pumpkin, peanut butter, zucchini, and…

Cinnamon Cacao Fat Balls

Fat balls are all the rage nowadays, and I totally get why. They’re easy to make, you don’t need to bake them, and they’re perfect for grab and go! I actually saw a recipe for cinnamon roll bliss balls on The Toasted Pine Nut blog and they looked amazing, BUT when I went to make them, I didn’t have most of the ingredients. Not cool, Melanie. So, I improvised and adapted to make my own little version. These babies are perfect straight out of the freezer and are filled with filling Eating Evolved Roasted Coconut Butter (which I’m positive is literal crack) and gut-loving collagen that I just loooove. I hope you guys like em’! Cinnamon Cacao Fat Balls Ingredients 1/2 cup Eating Evolved Roasted Coconut Butter (or any other nut butter of choice) 2 tablespoons almond flour 2 scoops Vital Proteins collagen peptides 1/2 teaspoon vanilla extract 2 tablespoons Philosophie…

3 Ways to Meal Prep Vegetables!

Meal prep is my jam. Like, I look forward to it every single week. I would actually do it every single day if I could (but then we’d have a surplus of food in this house.) My hubs actually asked me the other day what my “ideal day” would look like and I said: “Wake up, go workout, come home, have coffee, hang with the kids, work on the blog/business, and then spend the remainder of the day in the kitchen cooking.” Seriously, it just relaxes me so much. But enough about my obsession, let’s get down to biz. So, a huge point of meal prep is that you have lots of healthy options to choose from during the week right? Right. Well, I know a lot of people are always wondering how to fit more veggies into their day or just make veggies taste good! Because they ARE good!…

Cali Kale Salad

Kale has been a hot topic for a while now. Health gurus want you to practically bathe in it. It’s like okay, we get it, it’s good for you! And it is. But I was never (and I’m still not) THAT into it. I know. Sue me. But then one day I wandered into Plum Market in Old Town, Chicago and peeked around their salad bar. Nothing poked out at me except for this amazing looking kale salad- which they call California Kale Slaw. The ingredients are super minimal BUT there was one problem, it was made with canola oil. I know. The travesty. So, what’s a girl to do besides re-create it herself? 🙂 Not saying that I would NEVER eat Plum’s version again because, this is real life right? But this version is JUST as good (promise!) and MUCH more cost-effective. Win Win! This Cali Kale Salad is…

Loving Your Workouts + Staying True To You

Workouts are hard. Loving your workouts are even harder. And recently, I got into a huuuuge workout rut. My workouts stopped feeling exciting, I felt like they stopped working, some days they were too easy, some days they were too hard- sometimes it just felt like a million things had to go right in order for me to get a great workout.  I felt so frustrated and stuck. Can you relate? I was so caught up in this mindset of what everyone else was doing by scrolling through social media. Like, “Oh! She does cardio 5 days a week, I have to do that!” Or, “She does Soul Cycle and she’s super in shape so I have to start doing that!” You know those feelings that creep up on you when you scrolling through Instagram. It’s like walking through Pleasentville. Everything and everyone looks perfect and you only see the…
