Coconut Cream Berry Bowls Two Ways

I love when a food can be both a breakfast, snack, or a dessert- and that’s exactly what coconut cream is! It’s so versatile, naturally sweet, and full of good-for-you fats which you know I LOVE! So naturally, when AJ and I went to dinner the other night (we went to Little Beet Table) we got an amazing dessert- a Coconut Cream Berry Bowl with Lime+Mint. HOLY BALLS. This was delicious. It tasted like Summer+Spring exploded in my mouth. Right then and there, I thought, I HAVE to re-create this at home so we can devour it all Summer long. So that’s what I did. Turns out I had enough coconut cream left over so I made a chocolate one too. Because chocolate. Both of these are perfect for Spring or Summer BBQs, picnics, + dinners- or just a regular ol’ Tuesday night treat! I hope you enjoy! Coconut Cream…

My 3 Fave Healthy Easter Treats

Easter used to be my FAVE holiday of all time. Searching for Easter baskets in the morning (my mom still makes bomb-ass baskets), an easter egg hunt outside with all the neighborhood kids, the food. Yes, let’s talk about the food. Typically, ham is the main dish for everyone’s Easter celebration, but my fam does things a bit differently- we do pork loin, fish, salsa, + guacamole. Seriously, my dad cooks for the holidays and his salsa+guac is restaurant worthy. But, we all know dessert is the best part, right? That’s where your girl comes in. I’m letting you guys in on my three favorite Easter sweet treats that are HEALTHY and may even have some veggies in them. Enjoy! Coconut Flour Carrot Cake from the Detoxinista blog I made this cake a few years in a row now and even my family members who make fun of my “healthy…

Creamy Sage+Garlic Cashew “Hummus”

Most of you know that I was a vegan before, so you probably just assume I lived off of hummus + vegan protein bars. Well, you’re right. Man, I was a horrible vegan. Ugh. Nowadays, I’m so much more in tune with my bod and I know that traditional hummus- the kind made with chickpeas- makes ya girl bloat. I know, it’s tragic. So I have to get a little creative and make my own- which I’m totally okay with because it’s cheaper and I know EXACTLY what’s going in it! Win Win! So, a few days ago I had some raw cashews sitting around and I threw them into a jar with some filtered water to soak them. Keep in mind that I still had no clue what I wanted to do with them. Do I make cashew milk? Do I make a cashew “cheese?” Then, I saw my…

3 Breakfast Recipes I’m Loving Right Now

So, is this the never-ending winter? I believe it is. I also believe we chose the wrong week to go to Mexico (we came back to a snow storm!)- we should have went this past week! Whatev, what are ya gonna do? Since coming back and getting back into routine, I’ve found that my ice cold smoothie bowls in the mornings just aren’t cutting it anymore. Because it’s cold AF outside. And snowy. And rainy. And just gross. So, I’ve started experimenting with some warmer, cozier, quick breakfasts + snacks and I want to share these with you guys! Warm Chia Flax Pudding by Be Well By Kelly I’ve made this so many times and this recipe keeps me full forever- due to the chia + flax. Plus, you get your dose of good, healthy fats and a bangin’ dose of protein because of the powder! This recipe makes about…

Not Your Typical Valentine’s Day Guide

I love Valentine’s Day. There. I said it. I don’t care if you think it’s a “hallmark holiday.” I love the lovey dovey vibes of it. Am I saying “love” enough yet? I’ve loved Valentine’s Day since I was little because my mom always used to give us little gifts and leave us little love notes in our lunch boxes- whether it was a cool nail polish or something to do with Spice Girls (where my other fan-girls at?) or a simple “I Love You. Love-Mom” written on a heart-shaped post-it note- those feelings all come back to me every Valentine’s Day! And all the years I didn’t have a boyfriend? I celebrated with my girls! Truth. A few years back, my girlfriends and I were single so we went to Red Robin for dinner and then went to go see Dear John at the theater and I had a blast…
