Kale has been a hot topic for a while now. Health gurus want you to practically bathe in it. It’s like okay, we get it, it’s good for you! And it is. But I was never (and I’m still not) THAT into it. I know. Sue me. But then one day I wandered into Plum Market in Old Town, Chicago and peeked around their salad bar. Nothing poked out at me except for this amazing looking kale salad- which they call California Kale Slaw. The ingredients are super minimal BUT there was one problem, it was made with canola oil. This Sage+Onion Pot Roast with Rosemary Roasted Carrots may sound complicated, but it can be done in no time! I was always so intimidated to cook large cuts of red meat with the fear of the end product tasting chewy and dry. Plus I always thought red meat had to be cooked on the grill! Turkey Day Round-Up!

Thanksgiving is almost here so I thought I’d do a Turkey Day Round-up! I’m sharing my favorite dishes to make from the appetizers to desserts that won’t make you feel heavy + bloated the night of OR the day after! Appetizers Bacon-wrapped butternut squash: I got this idea from Kristin Cavallari (girl crush) and it’s my new go-to appetizer for any get together or holiday! Cut bacon in half, wrap pieces around cubed butternut squash, season with sea salt + cinnamon, bake  at 375 degrees F for about 30 minutes until bacon is cooked through and the squash is tender. I ended up broiling them for about 2 minutes at the end because I like the bacon crispy! So easy and so tasty! Side note about this dish: I took it to a party a few weeks back and won BEST APPETIZER.
